I love taking our go-to breakfasts and giving them a little fall twist. Think delicious spices, warm flavors, and just the right amount of sweetness that toddlers adore (and babies can enjoy too!). These recipes are simple enough for busy mornings but still feel special and festive for the season. Plus, I’ll share notes along the way on how to make each one baby-friendly, so you can serve the same meal to the whole family.
#1: Pumpkin Pancakes

There’s nothing like the smell of pumpkin spice on a cool fall morning, these are always a hit with my toddler and a nice nutritious way to start the day. Fluffy, fall-spiced pancakes made with pumpkin purée. Great for toddlers and easy to adapt for babies learning to self-feed.
Ingredients:
- 1 cup whole wheat flour (or oat flour for softer texture)
- 1 tbsp ground flax meal
- 1 tsp baking powder
- 1/2 tsp pumpkin pie spice
- 1 egg
- 1/2 cup pumpkin purée
- 3/4 cup milk (or breastmilk/formula for under 1)
- You can use a little more if you don’t want them to be super fluffy, just add 1 TBS at a time
- 1 tsp vanilla extract (or 1/2 tsp maple extract)
Directions
- Whisk flour, flax, baking powder, and spices in a bowl.
- In another bowl, whisk egg, pumpkin, milk, and vanilla (or maple).
- Pour wet mixture into dry and stir until just combined.
- Heat a greased skillet over medium heat. Cook small pancakes until golden on both sides.

- Cut into strips for baby-led weaning or small bites for toddlers.
- Try yogurt, fruit puree, or a thin spread of pumpkin butter for dipping.
#2: Apple Pie Oatmeal
Mornings can be hectic, but this apple pie oatmeal feels like a little apple pie moment in a bowl, my toddlers ask for their oatmeal on repeat! I like to stir in a spoonful of flax meal for some extra fiber and healthy fats. Soft, cinnamon-spiced apples make it perfect for both toddlers and babies.
Ingredients
- 1/2 cup rolled oats
- 1 cup milk (or water/breastmilk/formula for babies)
- 1/2 tsp cinnamon
- 1/4 tsp nutmeg
- 1 small apple, peeled and diced
- 1 tsp maple syrup or honey (for toddlers over 1 only)
- 1 tbsp ground flax meal
- 1/2 tsp vanilla extract (or 1/4 tsp maple extract)
Directions
- In a small saucepan, combine oats, milk, and spices. Bring to a simmer.
- Add diced apple and cook until oats are soft and creamy (or whatever consistency your child prefers), about 5–7 minutes.
- Stir in flax meal and maple syrup (if using) just before serving.
Notes / Baby Version
- For babies, cook apples extra soft and mash or purée along with the oats.
- Skip sweeteners for under 1; the natural sweetness from the apple is perfect.

#3: Pumpkin Oatmeal

Pumpkin in breakfast feels like an instant mood-lifter on a crisp fall morning. Creamy, pumpkin-spiced oatmeal that works for both toddlers and babies.

Nothing says fall like a cozy slice of toast with pumpkin goodness — my toddler loves helping me spread it! For babies, I like to use a little coconut oil to soften the toast and make it easier to mash. A touch of vanilla or maple extract adds that warm, fall flavor.
Ingredients
- 1–2 slices whole grain bread
- 2 tbsp pumpkin butter or apple butter (store-bought or homemade)
- 1/2 tsp vanilla extract or 1/4 tsp maple extract (optional, just gives a fun flavor boost)
- 1 tsp butter or coconut oil
Directions
- Toast the bread to your desired crispness.
- Warm pumpkin/apple butter slightly and stir in vanilla or maple extract.
- Spread butter or coconut oil on toast, then layer with pumpkin butter mixture.
- Slice into fingers for easy toddler or baby-friendly bites.

- Use coconut oil to soften the toast and pumpkin butter for a mashable texture.

#5: Breakfast Roll-Ups (Crepe-Style with Maple or Pumpkin Whip)
These roll-ups are fun to make and even more fun to eat, my toddler loves helping me spread the filling and rolling them up! A touch of vanilla or maple extract in the whip adds that yummy fall flavor.
Ingredients
- 1 whole wheat tortilla (or thin crepe)
- 2–3 tbsp pumpkin or maple-flavored whipped spread (pumpkin butter, yogurt + pumpkin, or homemade pumpkin whip)
- 1/2 tsp vanilla extract or 1/4 tsp maple extract
- Optional: sprinkle of cinnamon
- Sprinkle of flax meal (optional)
Directions
- Warm the tortilla or crepe slightly so it’s flexible.
- Mix pumpkin whip with vanilla or maple extract (and flax if using).
- Spread over the tortilla.
- Add optional cinnamon if desired.
- Roll tightly and cut into 1–2 inch bite-sized pieces.

- For babies, mash or soften the filling so it’s easy to gum or spoon-feed.
- Use a very soft tortilla or steamed crepe for little mouths.

#6: Mini Pumpkin Muffins

These little muffins are the perfect grab-and-go fall breakfast. My toddlers loves nibbling on them with some fruit or maple syrup on the side. Muffins are a big fall staple in our house.
Ingredients
- 1 cup whole wheat flour (or you could use oat flour for softer texture)
- 1 tbsp ground flax meal
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp pumpkin pie spice
- 1 egg
- 1/2 cup pumpkin purée
- 1/4 cup unsweetened applesauce or mashed banana
- 2 tbs maple syrup
- 1/4 cup milk (or breastmilk/formula for under 1)
- 1 tsp vanilla extract (or 1/2 tsp maple extract)
Directions
- Preheat oven to 350°F and grease or line a mini muffin tin.
- In a bowl, whisk flour, flax, baking powder, baking soda, and spices.
- In another bowl, whisk egg, pumpkin, applesauce/banana, milk, maple syrup, and vanilla.
- Combine wet and dry ingredients until just mixed. Sometimes for my toddler I like to add in a handful of chocolate chips!
- Spoon batter into mini muffin cups and bake 10–12 minutes, or until a toothpick comes out clean.
Notes / Baby Version
- These are naturally soft and can be cut into small pieces or strips for babies.
- Skip sweeteners. The fruit and pumpkin add natural sweetness
- For younger babies, crumble and mix with a little breastmilk, formula, or yogurt to soften.
#7: Apple Cinnamon Yogurt Parfaits
Parfaits always feel like a “treat” breakfast in our house, but they’re so simple to throw together on busy mornings. My toddler loves scooping the layers, and I like adding a sprinkle of flax for extra fiber.
Ingredients
- 1/2 cup plain or vanilla whole milk yogurt
- 1/2 small apple, peeled and finely diced or grated
- 1/4 tsp cinnamon
- 1/2 tsp vanilla extract
- 1 tsp ground flax meal
- Optional: sprinkle of granola for toddlers
Directions
- Mix yogurt with vanilla/maple extract, cinnamon, and flax meal.
- In a small bowl or cup, layer yogurt and apple pieces.
- For toddlers, add a sprinkle of granola or oats on top for crunch.

- Use finely grated or steamed apple pieces for babies.
- Skip granola for under 1; instead, mix in softened oats or extra fruit.
- You can also use this same recipe but freeze into a bar form for toddlers, my kids love it!
#8: Chia Seed “Pudding” (Pumpkin or Maple)
This one feels like dessert for breakfast, which is why my toddler thinks it’s extra special. I love that it takes just a few minutes to prep the night before, and I usually stir in flax alongside the chia for even more goodness.
Ingredients
- 1/2 cup milk (dairy or non-dairy; use breastmilk/formula for babies if desired)
- 2 tbsp chia seeds
- 1 tbsp ground flax meal
- 2 tbsp pumpkin purée or 1 tsp pure maple syrup (for toddlers 1+)
- 1/2 tsp cinnamon
- 1/2 tsp vanilla extract
Directions
- In a jar or bowl, whisk together milk, chia seeds, flax meal, pumpkin/maple, cinnamon, and vanilla.
- Let sit 5 minutes, then stir again to prevent clumping.
- Cover and refrigerate at least 2 hours or overnight until thickened.
- Stir well before serving; top with fruit if desired.
Notes / Baby Version
- For babies, blend pudding smooth to avoid whole chia seeds.
- Skip maple syrup for under 1; pumpkin alone adds flavor.
- Serve with fruit for added sweetness and texture, you can also add a side of toast for a balanced breakfast feel.
#9: Sweet Potato Waffles
Waffles are such a hit in our house, and adding mashed sweet potato makes them nutritious and naturally sweet for fall mornings. I usually spread butter (or coconut oil for babies) on top while they’re warm so they stay soft.
Ingredients
- 1 cup mashed cooked sweet potato (about 1 medium)
- 1 cup whole wheat flour (or oat flour)
- 2 tbsp ground flax meal
- 1 tsp baking powder
- 1/2 tsp cinnamon
- Pinch nutmeg
- 1 cup milk (dairy or non-dairy)
- 1 egg
- 1 tsp vanilla extract
Directions
- Preheat waffle iron.
- In a large bowl, whisk together flour, flax, baking powder, cinnamon, and nutmeg.
- In another bowl, mix mashed sweet potato, milk, egg, and vanilla.
- Combine wet and dry ingredients; stir until just mixed.
- Pour batter into greased waffle iron and cook until golden and fluffy.

- For babies under 1, serve plain, or with yogurt or coconut yogurt.
- You can cut into strips or small pieces for easy self-feeding.
- Leftovers freeze great, so this is a great meal prep breakfast too! Just pop in the toaster to reheat.
#10: Oatmeal Banana Bites (Apple Pie Flavor)
These little bites are one of my favorite ways to use up ripe bananas. Toddlers love them, and they’re easy for babies to gum.
Ingredients
- 2 ripe bananas, mashed
- 1 1/2 cups rolled oats
- 1/2 cup finely diced apple (peeled if preferred)
- 1 tsp cinnamon
- 1/2 tsp apple pie spice (optional)
- 1 tbsp ground flax meal
- 1 tsp vanilla extract
- Optional: drizzle of maple syrup
Directions
- Preheat oven to 350°F and line a baking sheet with parchment.
- Mash bananas in a bowl until smooth.
- Stir in oats, apple, flax, cinnamon, apple pie spice, vanilla, and maple syrup if using.
- Scoop small spoonfuls onto baking sheet, pressing slightly into bite-sized rounds.
- Bake 12–15 minutes, until firm but soft in the center.

- For babies, use extra-soft baked apple instead of raw apple for easier chewing.
- These bites are great for self-feeding, serve whole for toddlers or cut in half for babies.
Apple Pie Oat Cups
Think of these like handheld baked oatmeal, perfect for busy mornings or snack time. They’re chewy, warmly spiced, and filled with soft apple pieces. My toddler loves grabbing them right out of the fridge!
Ingredients
- 2 cups rolled oats
- 1 tsp cinnamon
- 1/2 tsp apple pie spice (optional)
- 1 tbsp ground flax meal
- 1 tsp baking powder
- 1 1/2 cups milk (dairy or non-dairy)
- 1 ripe banana, mashed (or 1/2 cup applesauce)
- 1 tsp vanilla extract
- 1/2 cup finely diced apple
- Optional: 2 tbsp maple syrup
Directions
- Preheat oven to 350°F and grease a muffin tin.
- In a bowl, mix oats, flax, cinnamon, apple pie spice, and baking powder.
- In another bowl, whisk milk, banana/applesauce, vanilla, and maple syrup if using.
- Combine wet and dry ingredients, then fold in diced apple.
- Spoon mixture into muffin cups, filling almost to the top.
- Bake 25–30 minutes, until set and lightly golden.

- Use finely grated or steamed apple for babies to make it softer.
- These are firm enough for little hands to hold but soft inside for easy chewing.

Pumpkin Oatmeal Bars with Pumpkin Butter Filling
These bars taste like a cozy slice of fall but are made with nourishing ingredients. The soft oat base and sweet pumpkin layer make them a perfect breakfast or snack for toddlers. Babies can enjoy them, too, with a few tweaks.
Ingredients
- 2 ripe bananas, mashed (or 1 cup applesauce)
- 2 cups rolled oats
- 1 tbsp ground flax meal
- 1/2 tsp cinnamon
- 1/2 tsp pumpkin pie spice
- 1 tsp baking powder
- 1 tsp vanilla extract
- 1/2 cup pumpkin purée
- 2 tbsp pumpkin butter (or sweetened pumpkin purée with maple + spice)
- 2 tbsp coconut oil or butter, melted
Directions
- Preheat oven to 350°F and line an 8×8 pan with parchment paper.
- In a bowl, mash bananas and stir in vanilla and melted coconut oil/butter.
- Add oats, flax, cinnamon, pumpkin pie spice, and baking powder; stir to combine.
- Spread half the oat mixture into the prepared pan.
- Mix pumpkin purée with pumpkin butter, then spread evenly over the base.
- Top with remaining oat mixture, pressing lightly.
- Bake 25–30 minutes, until edges are golden and center is set. Cool before cutting into bars.
Notes / Baby Version
- Use unsweetened pumpkin purée instead of pumpkin butter for babies under 1.
- Cut into small strips or cubes for baby-led weaning.
- These freeze well, so it’s another that’s great for meal prep! Store in airtight bags for quick, cozy breakfasts.
